Sadly we have to admit that in some countries we’ve become very wasteful, buying ready meals and throwing away a lot of perfectly good food.
Now it’s time to go back to the past, making the most of what we have. So I’ll be sharing some economical recipes with you.
Do write your time-passing tips, things to do, hobbies that can be done at home, etc.
I went to Tesco, our local supermarket yesterday and took some photos. I’ve been keeping an eye on it over the past couple of weeks and I’m surprised at the first things that disappeared from the shelves. But it makes you aware of things that we’ve taken for granted.
Tinned tomatoes disappear quick and are now rationed at five tins per person. Of course, they come from Italy, which is in lockdown.
Tinned tuna was another thing. And now everything’s being grabbed.
The biggest surprise was the eggs. Not only have they all gone, but their containers have been removed. Chickens lay all the time, so how can there be a shortage? There are plenty of local farms.
Bananas was another surprise. I got the last two.
One thing that I became aware of; don’t touch the supermarket trolley handles. They’re filthy and are constantly used. I pulled my jumper down over my hands and steered by holding the sides.
Here is my own recipe for colds, bad breathing, etc. And it works! I really should patent it. If someone’s having trouble breathing, it could give temporary relief before the Medics turn up.
LYN’S INCREDIBLE NOSTRIL-BLASTING COLD REMEDY.
1 tsp Vick or an own-brand jar.
1 tsp Ginger
1/2 tsp Cloves
1 tblsp Thyme
1/2 tblsp Oregano
NB if you haven’t got those herbs, substitute something else, like Rosemary or Mixed Herbs.
Cover with boiling water and stir quickly.
Breathe in the fumes deeply with a towel over your head and your mouth open.
I think the Americans believe that Chicken Soup for the Soul can cure everything!
If you roast a chicken, don’t put portions on the plates. Strip off as much meat as you can and place all the bones in a pan.
You should get a couple of recipes from the meat, eg your roast dinner, then a chicken pie, chicken fricassee, chicken curry.
Cover with cold water, bring to the boil and simmer for a couple of hours, making sure all the bones are submerged by turning them over.
Turn off the heat and leave to cool, then remove the bones and pick off all the meat. There will be quite a lot still on there.
Tip all the boiled meat into the water, and now add whatever you have available, all finely chopped, eg onions, carrots, something green, like cabbage or sprouts or peas.
Now you need some thickening agents, like potatoes, lentils, swede, parsnips or noodles.
Season the pan and add some extras, like herbs, soya sauce, chilli if liked, or an Oxo cube .
Cook gently for an hour or more.
Remember, when you turn the heat off, it will continue cooking while it’s hot.
We’ll be giving you some economical cleaning tips. But I do suggest that you buy a Steam Cleaner. They’re not expensive, and you can blast the whole house in a short time, including the cooker, door handles, carpets, bathrooms and toilets, mattresses, etc.
