As the cold weather begins to nip, this classic Welsh dish is deliciously warming and simple.


6 large baking potatoes, peeled and thinly sliced

2 large onions

100g Caerphilly Cheese

100g leeks, washed, trimmed and finely sliced

150ml milk

1 egg lightly beaten

4 tbsp vegetable stock

Salt and pepper to season



Pre-heat the oven to 200oC/ 400Of/ gas mark 6

In a large, ovenproof dish, place alternate layers of potato, onion, cheese and leeks, seasoning each layer with salt and pepper.

Mix the egg into the milk and pour over the potatoes, add the vegetable stock.

Cover and bake in the centre of the oven for 40 minutes, remove the cover and bake for a further 10-12 minutes.
