Sometimes our senses enjoy getting a surprise.

You can brighten up the simplest dish by making it look really attractive and different.

Try my Omelette Muffins. The family will be pleasantly surprised.

Ingredients for 2-3 people, or 4 as a starter.

5 eggs, beaten

A generous splash of cold water

Seasoning

Filling of your choice. I chose ½ a chopped onion, grated cheese, a large chopped tomato, chopped smoked salmon.

You could use ham, mushrooms, asparagus, sweetcorn, or other vegetables.

Grease a muffin tin.

Mix the chosen ingredients into the beaten egg, and spoon it into the muffin tin, just over half full as it will rise a bit.

Do this as soon as you mix in the ingredients and do give the mixture a couple of stirs to stop everything sinking to the bottom.

Bake at 180C for around 18 minutes.

Take the tin out of the oven. The muffins will continue to cook for a few minutes while they cool.

Slip a knife round the edge of each muffin and lift onto the plates.

I served them with a mixed salad. Or they could be eaten as a snack.
