Holy Mole! Great Tortilla Recipe.
There’s a lot more that you can do with tortillas except using them for wraps.
Cut them into triangles and fry them in oil for a few seconds until they lightly brown, then drain them.
They’ll harden up as they cool. Eat them as they are, or use them in dips.
Once you’ve tried them you’ll never buy them in packets again!
Pieces of tortilla are often cooked in the dish.
Try my version of a mole. The Mexicans eat similar dishes for breakfast, but I’ll pass on that one!
This is completely vegan if you don’t use honey, but meat eaters won’t notice.
It costs just a few pence!
You don’t have to be too accurate with the ingredients and you can adjust them if you taste it as you go along.
1 chopped onion
3 cloves of garlic
1 tsp cinnamon
1 tsp dried oragano or thyme
1/2 tsp cumin
1/2 tsp ground coriander
a red pepper, chopped
1 Habanero chilli
1 tin tomatoes
1/2 tin lentils
50g dark chocolate
2tsps honey or sugar
1 tsp wine vinegar (I used Balsamic)
500ml veg stock
Slowly fry the onion. Add the rest of the ingredients except the tortillas.
Tear the tortillas into small pieces & stir into the saucepan.
Simmer for around 1/2 hour until the mixture thickens.
It’s not a very pretty dish, so you can add some colour.
Serve, if you like, with toppings, eg chopped avocado,chopped tomatoes, fresh coriander, spring onions, sesame seeds.
You can wrap it in tortillas, or use them to mop it up.
