Green tomatoes

Remember how I showed you to grow tomatoes from tomato slices when all the garden centres were closed?

We got around 56 tomato plants from a few seeds, with a steady supply of delicious fresh tomatoes.

But now it’s the end of the season, so we’ve picked all the tomatoes and pulled up all the plants.

I’ve had pounds of green tomatoes, but I didn’t want to make chutney. We don’t eat enough of it.

So here is a selection of green tomato recipes.

These became famous after the film Fried Green Tomatoes at the Whistle Stop Café.

I’d never tried them before, but now I highly recommend them. They’re delicious. And my husband took some cold in his packed lunch.

Slice the tomatoes quite thickly, from top to bottom. This keeps the seeds in place.

Dip them in beaten egg, then in breadcrumbs.

Shallow fry in hot oil, turning them over when they’re crisp and golden.

Drain on kitchen roll.

I cooked mine in the oven, on an oiled tray and it worked perfectly.

I served them with a steak, jacket potato and garlic mushrooms. But they are delicious on their own; crisp on the outside and juicy inside.

I wasn’t quite sure about making this, but tomatoes are a fruit, so I thought it should taste nice. And it does!

You don’t need exact quantities. Adjust it to fit your baking dish.

Ready rolled shortcrust or puff pastry. Or you can make your own.

Slice enough green tomatoes, not too thinly, to generously fill your baking dish. They will shrink a bit when cooked.

Mix together in a saucepan 3fl oz water, 1 tsp lime juice, & 3oz brown sugar.

Bring to the boil & add the tomato slices. Cook until the sauce has turned colour. Don’t stir.

Arrange the tomato slices in the bottom of a greased baking dish, overlapping them slightly. Tip the sauce over them. Sprinkle with sugar, ½ tsp cinnamon, ¼ tsp nutmeg, & sultanas, raisins, or mixed fruit.

Cover with the pastry. Brush it with milk & sprinkle with sugar.

Bake until golden and crisp.

This pie has a tropical fruit flavour, slightly similar to mango.
