Here are some great recipes for using up your Christmas turkey.

TEX-MEX TURKEY CHILLI PATE WITH KIDNEY BEANS.

1lb (approx.) turkey

2oz (or more) chopped onion

1 garlic clove

Tin of red kidney beans

2 tblsp (or less) chilli powder

1 large tblsp tomaTo puree

4 tblsps red wine (you can use white or rose)

Seasoning

oil for greasing the tin

Heat the oven to 180C, gas 4.

Save 4ozs of the turkey.

Place meat, onion & garlic, chilli, seasoning, tomato puree, wine & all the tin of beans except 2oz, in a food processor & mix until smooth.

Tip in a bowl & stir in the chopped turkey & remaining beans.

Grease a 2lb loaf tin & place mixture in the tin, tapping it down & pushing into the corners.

Cover with foil & stand on a tin. Add hot water to the tin & bake for approx. 50 minutes.

If it isn’t set, remove from tin, take off the foil & return to the oven for 10-15 minutes to dry out.

Cool in the tin, then tip it out onto a plate.

GOBBLE ‘N SQUEAK PIE

Gobble ‘n Squeak

Bubble ‘n Squeak has got to be one of Britain’s Favourite Meals. It’s suitable for vegans, vegetarians & omnivores.

Use a mixture of cooked green & root vegetables, potatoes, plus peas & sweetcorn.

Place a layer of oil in a frying-pan, tip in the vegetables & cook them at quite a high temperature, mixing them around all the time until they’re hot.

It’s the high temperature that makes them Bubble & Squeak!

Add chopped turkey & a generous tblsp Cranberry Jelly. Stir well until the Cranberry has melted & the mixture’s hot again. Turn off heat.

I bought a packet of puff pastry for my Gobble ‘n Squeak Pie & it was exactly right.

There was enough for the base, top & decorations.

Roll out the pastry, line a dish, tip in Gobble ‘n Squeak, add the lid, press down & glaze with milk.

Bake slowly for about 50 minutes-an hour. The top should be a dark golden colour.

Gobble ‘n Squeak

You could serve with chips or roast potatoes, but it’s a complete meal on its own.

Bubble ‘n Squeak is also delicious with 4-5 eggs beaten into it, then tipped into a dish & cooked in the oven for around half an hour.

 

TURKEY FRICASSEE OR TURKEY A LA KING

This is a simple meal that is always a great hit!

If you add chopped peppers it becomes Turkey a la king. Of course you can use chicken instead, or just mushrooms if you’re vegetarian & soya milk if you’re vegan.

This is a Leftover meal, so ingredients depend on what you’ve got.

Trust your tastebuds!

1 tblsp butter or marge (less oily than oil!)

Chopped onion

Chopped turkey

Chopped mushrooms

Chopped green or red pepper

1 heaped tblsp flour

Milk to thicken. Approx ½ pint

You can add cream if you have any.

Dash French mustard (optional)

Seasoning

Chopped parsley.

Melt butter & gently fry the onion until it’s soft.

Add the mushrooms & the pepper, if using.

Stir in the flour & the milk. Whisk until smooth & thickened. Obviously you can add more flour if it’s too thin & more milk if it’s too thick. But mix the flour into COLD milk before adding.

Add the other ingredients & stir well.

Serve with mashed potato & peas, or with rice. Both of them bring out the lovely creamy flavour of the recipe.
