aguaLast year I discovered a wonderful variable recipe from Mexico which proved very popular with our Readers!

 It’s time again for huge, cheap watermelons. I don’t actually like watermelon very much. It’s not that I dislike it, but I find it quite bland, and messy to eat. Well try Agua Fresca!

It’s just Spanish for Fresh Water, and it’s sold all over Mexico from stalls, and in restaurants too. You can vary the recipe to suit whatever ingredients you have.

CUCUMBER LIME MINT AGUA FRESCA.

2 average-sized cucumbers, coarsely chopped.

Our home-grown cucumbers need peeling. Then I slice them in half and de-seed them with a teaspoon.

½ cup lime juice.

About 6 mint leaves.

½ cup sugar.

Approx ½ cup water.

Blitz all the ingredients in a blender, then taste.

Add more sugar and water if needed.

You can strain it through a sieve if you’re feeling posh. I like the rustic bits!

Pour over ice cubes, and serve.

 

WATERMELON AGUA FRESCA

4 cups cubed, seeded watermelon.

It took just over half of my huge watermelon.

All the other ingredients are the same.

Again, taste and add more of whatever you fancy.

 

This was a great success, and very refreshing.

 

STRAWBERRY AGUA FRESCA.

6 cups hulled strawberries.

Again, all the other ingredients are the same.

 

HIBISCUS FLOWER AGUA FRESCA.

¼ cup flowers.

Boil for 2-3 minutes.

All the other ingredients are the same.

I’m going to make this with Elderflower.

 

As you can see, this recipe is adaptable for practically anything. It’s the blackberry season here soon, so I’m also going to try it with them. And how about celery? I’m also going to make it with nettles for a morning drink. I’ll boil the nettles first. Don’t worry about being exact with the measurements. You’ve got eyes and tastebuds, haven’t you? You can make up a couple of jugfuls and store it in the fridge. It will keep for several days.

It’s great for barbecues and parties, and it’s very popular with guests who have to drive home, so they can’t have any alcohol.

Children love it, and so do their parents as it doesn’t have any artificial additives.
